RECIPES You will notice that the following recipes look more like guidelines, they are plant based, have almost no added oils, consist of a great variety of whole foods in a rainbow of colors, and are rich in vitamins, phytochemicals, antioxidants, protective nutrients, and fiber.  Experiment with them.  Focus on better nourishing yourself and your family.


Use one whole butternut, acorn squash, or kabocha pumpkin and one whole Korean sweet potato. Do not peel, but if cut in half they will bake in slightly less time.


Place them in a plain Pyrex pan (no grease or water).


Bake uncovered at 375° for one hour or a little more - Test with a toothpick make sure they are soft. At this temperature the squash and sweet potato will caramelize without burning to a bitter taste.


If not ready to make the soup, cool off after baking and refrigerate. Scoop from the soft bake and use it as a creamy spread on a slice of toasted pumpernickel bread.


SQUASH SOUP

Blend the squash and sweet potato plus one half cup raw cashews and enough water + rice milk for the ingredients to move freely in the jar. Do not burn the motor, puree in batches.  Use water and rice milk instead of vegetable broth to preserve the clean sweet flavor of the original ingredients.   


When you reach a creamy consistency, season with sufficient salt and pepper to bring out the delicious whole food flavors.

CALABAZA y CAMOTE Al HORNO - (clic aqui para la versión imprimible)


Una calabaza (butternut o acorn) con la cáscara.  Pícala por la mitad y quítale las semillas.  Un camote  entero.


Colócalos boca abajo en un molde de cristal resistente, sin agua o aceite, y hornéalos a 375° por una hora.  A esta temperatura las azúcares naturales de las calabaza y el camote se acaramelizan sin quemarse.


Sácalos cuando la cáscara se vea dorada y les puedas hundir un palillito con facilidad.


Para un sabor saladito, sazónala con limón, sal, pimienta, comino, u otras especies. 


Para un sabor más dulzón, sazónala con canela, jengibre, o clavos de especie.


Gózala con arroz, ensalada, verduras, o frutas.  Su consistencia cremosa también se presta para untarla en una rebanada de pan integral pumpernickel tostado.


La puedes guardar en la nevera hasta que quieras preparar la sopa que sigue.


SOPA USANDO LA CALABAZA HORNEADA

Pon calabaza y el camote asado con suficiente agua en la licuadora.  Añade suficiente agua y leche de arroz hasta lograr la consistencia de un puré cremoso.


Añade 1/4 taza de nueces de la India (cashews) crudas y continúa licuando hasta conseguir la consistencia que desees, puede que necesites más agua.


Sazona con suficiente sal y pimienta a gusto.


Sírve esta sopa sabrosa bien caliente, gózala espesa y fría en lugar de un yogurt, o como aderezo sobre otros vegetales cocidos.
